For a long time I had been wanting to make something sweet with pumpkin after reading others blogs filled with delicious pumpkin recipes. So for my first sweet pumpkin recipe I bring to you halloween pumpkin choc-chip cupcakes!
I was quite happy with these cupcakes, I actually thought they tasted like caramel mudcake...although no one else agreed lol. I decided to decorate them with halloween in mind, planning on giving them to trick or treaters, but none turned up! Times like this I wish I lived in the US.

makes approx 18
1 tbsp apple cider vinegar
1 ½ cups vanilla soymilk
2 1/4 cups flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 1/4 cups sugar (I used 1 C because the choc-chips make them quite sweet)
½ cup oil
1 ½ tsp. vanilla extract
1/2 tsp. ground cinnamon
3/4 cup pumpkin
1/4 cup vegan chocolate chips
Preheat the oven to 350ยบ. In a small bowl, add the soymilk + apple cider vinegar. Stir well and set aside (the mixture will curdle). In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda, pumpkin, cinnamon, and salt. In another mixing bowl whisk together the soymilk mixture, canola oil, and vanilla extract. Add the wet to the dry ingredients and beat until smooth using a hand-held mixer. add the chocolate chips, and gently fold them into the batter (hand held mixers might break the chips!). Fill each muffin cup 3/4ths the way with batter. Bake for 20-25 minutes. Let cool in the pans for 5 minutes, then remove cupcakes from the pan and place on a wire rack. Let the cupcakes cool completely before frosting.
Cinnamon Cream Cheese Icing
1/2 cup nonhydrogenated vegan margarine (softened, i used earth balance sticks)
1/2 cup vegan cream cheese (softened, i used tofutti)
4 cups confectioners sugar
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
Cream together margarine, flavor extracts, cinnamon, and cream cheese until combined. add the confectioners sugar in 1/2 cup batches and mix until smooth and creamy. keep tightly covered and refridgerated until ready to use.

The icing was really yummy, I had never made icing with vegan cream cheese before, but I will be making it like this from now on.

1. I am terrified of moths, but love butterflies.
2. My boyfriend and I plan to one day buy a farm and have farm animals as pets and a huge veggie garden.
3. My favourite food is gnocchi, potato or pumpkin please :)
4. I live 15 minutes walk from the beach, but hardly ever go there.
5. Christmas is my favourite time of year, we get a real christmas tree every year and the smell is amazing every time.
6. I can touch type, I learnt at school and it makes life so much easier!
7. I worry alot, about everything. About what im doing now, what I did or didnt do yesterday, last week, tomorrow, a year from now. Its not a good thing, it makes me think much too much.
