Giveaways, Kate Miller-Heidke & Trifle

Recently I was so lucky to win not one but two giveaways! I could hardly believe it!

The first is a pair of cute red apple earrings from That Vintage which I won through Alicia of The Red Deer. That Vintage has the most gorgeous wooden bird necklaces, so head on over for a peek in the shop.

Secondly I received a lovely book called Sweet Nothings from Solanah of Vixen Vintage, it has patterns for lovely camis, undies and pj's. Hopefully I will have time to make one of the patterns in my holidays.

Dont forget to enter my Giveaway if you haven't already!

Last week I discovered that Coles sells gelatin free jelly crystals so decided to make a trifle!

Theres not really a recipe for trifle, its a very 'throw it all together' type of dessert. But I used:
- Layer of sponge cake (Coles vanilla cake mix)
- Layer of tin fruit salad
- Layer of raspberry jelly (pour over when half set so it doesnt all seep into the sponge cake layer.
- Custard made with rice milk
- Soyatoo spray cream
- Fresh chopped strawberries
- Grated Sweet William chocolate

It tasted best the following day once all the flavours had settled.

Last Wednesday evening I went to see Kate Miller-Heidke in concert at the Festival Theatre. My friend Hillness and I had seen her twice before at a much smaller venue before she became well known. It was a little different because we were all seated, so was much more formal than her previous concerts.
We still had an awesome time though! They had amazing lights on stage which changed colour throughout the night and the band had heaps of fun on stage. Im looking forward to her next concert already!

Here are a couple of photos I took, the quality is really bad, i havent quite worked out how to take indoor photos with my newish camera. If your interested in hearing Kate Miller-Heidke, you can listen to the album preview here.

A final photo I just had to share of my kitty Tiger. Hes so funny insisting he sit on every piece of paper he can find, here he is sitting on a paper packaged chair.

Lastly, I received an award from the lovely Sher of Beneath The Crystal Stars. Thanks very much Sher :) If you enjoy blogs with beautiful words and pictures, head on over and visit Sher.

I would like to pass The Fabulous Sugar Doll Blogger Award onto...

Denise of Denise Katipunera

Maria of Lulu Letty

Cheryl of Adventures of a Pinay Neska

I
hope you have a lovely week !

50th Post Giveaway!!!

This post is my 50th! I can hardly believe it! When I started blogging back in April I never thought I would meet so many lovely people with similar interests, likes and hobbies as I have, and certainly never thought I would have so many people interested in my posts.

So I thankyou so very much for all your encouragement, beautiful comments and keeping me entertained with your amazing blogs. I cannot tell you how much I appreciate you all :)

In honor of my 50th post and to say thankyou, one of you will win these goodies....

Originally I wanted to make something for my giveaway, but due to lack of time knew this would not be possible. Last week I was on a shopping trip when I spotted this lovely pink and purple scarf with the prettiest pattern and hot pink pom pom trim. I wanted to buy it for myself, but seen as I already have about 20 scarves was about to walk away, just then my giveaway popped into mind and I bought it thinking it is perfect to give to one of my followers!

Of course I had to include matching accessories, so im including the pretty purple bow headband and gold, pink and purple bracelets. Everything is new with tags still attached.

Scarf up close...

I thought they all match perfectly :)

Bracelets up close...

Pumpkin Cupcakes & Awards

For a long time I had been wanting to make something sweet with pumpkin after reading others blogs filled with delicious pumpkin recipes. So for my first sweet pumpkin recipe I bring to you halloween pumpkin choc-chip cupcakes!

I was quite happy with these cupcakes, I actually thought they tasted like caramel mudcake...although no one else agreed lol. I decided to decorate them with halloween in mind, planning on giving them to trick or treaters, but none turned up! Times like this I wish I lived in the US.

I found this recipe here.

Vegan Pumpkin Chocolate Chip Cupcakes
makes approx 18

1 tbsp apple cider vinegar
1 ½ cups vanilla soymilk
2 1/4 cups flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 1/4 cups sugar (I used 1 C because the choc-chips make them quite sweet)
½ cup oil
1 ½ tsp. vanilla extract
1/2 tsp. ground cinnamon
3/4 cup pumpkin
1/4 cup vegan chocolate chips

Preheat the oven to 350ยบ. In a small bowl, add the soymilk + apple cider vinegar. Stir well and set aside (the mixture will curdle). In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda, pumpkin, cinnamon, and salt. In another mixing bowl whisk together the soymilk mixture, canola oil, and vanilla extract. Add the wet to the dry ingredients and beat until smooth using a hand-held mixer. add the chocolate chips, and gently fold them into the batter (hand held mixers might break the chips!). Fill each muffin cup 3/4ths the way with batter. Bake for 20-25 minutes. Let cool in the pans for 5 minutes, then remove cupcakes from the pan and place on a wire rack. Let the cupcakes cool completely before frosting.

Cinnamon Cream Cheese Icing

1/2 cup nonhydrogenated vegan margarine (softened, i used earth balance sticks)
1/2 cup vegan cream cheese (softened, i used tofutti)
4 cups confectioners sugar
2 teaspoons ground cinnamon
2 teaspoons vanilla extract

Cream together margarine, flavor extracts, cinnamon, and cream cheese until combined. add the confectioners sugar in 1/2 cup batches and mix until smooth and creamy. keep tightly covered and refridgerated until ready to use.

The icing was really yummy, I had never made icing with vegan cream cheese before, but I will be making it like this from now on.

Inside...pumpkin goodness :)
